Raspberry Cheesecake Parfaits
Serves 4-6
12oz package of frozen raspberries
1/4 cup sugar
2/3 cup water
1 tablespoon starch (arrowroot, tapioca, corn)
1 package of cream cheese
1 pint of creme fraiche (or heavy whipping cream)
1 tablespoon lemon juice
1/3 cup powdered sugar
1 box of graham crackers
Fresh raspberries
Cook the raspberries, sugar, water, and starch for 10 minutes or until thick. Allow to cool.
Soften the cream cheese and whip with lemon juice and sugar.
In a separate bowl, whip the creme fraiche until stiff peaks form.
Fold the whipped cream into the cream cheese.
Assemble parfaits in cups and top with fresh raspberries.
