Pineapple Shrimp Skewers (gluten-free, dairy-free)

Get your grill (or grill pan) fired up—This recipe is super simple, and only requires a few minutes of active time. The result is a guaranteed crowd-pleaser at any summer barbecue.


Pineapple Shrimp Skewers


Method:

  • Combine the first six ingredients in a medium-sized bowl.

  • Add the shrimp and marinate for at least one hour.

  • Peel, core, and cube the pineapple.

  • Assemble the skewers by alternating shrimp and pineapple.

  • Grill over an open flame or in a grill pan on the stove on medium-high heat for about 3 minutes on each side.

  • Sprinkle with cilantro and serve.

Ingredients:

1/4 cup gluten free tamari

2 tablespoons sesame oil

2 cloves of garlic, minced

1 tablespoon rice vinegar

Chili flakes, to taste

1 lb shrimp, rinsed, shells removed

1 ripe pineapple

Fresh cilantro leaves
